Pecan Sugared Coffee Cake
Ingredients
1 cup salted butter (or 2
sticks)- I used 2 sticks
1/2 cup + 2 Tablespoons light
brown sugar
1 large egg lightly beaten
1/2 cup sour cream
1/2 teaspoon vanilla extract
1 + 1/4 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
Topping + Middle layer
1 cup Pecan- super finely
chopped
1 teaspoon cinnamon -( I like
it without the cinnamon)
1/2 cup brown sugar - (if you
don't like the topping in the middle of the cake only use a 1/4 cup of the
sugar to make the topping)
Instructions
Lightly grease an 8x8"
baking pan.* Preheat oven to 350° F. Combine butter and sugar
in mixer and cream together until fluffy. In a separate bowl lightly beat
egg then add sour cream and vanilla pour in with the creamed sugar and
butter. Chop pecan and add sugar (and cinnamon),
set aside. In a separate
bowl whisk together flour, baking soda and baking powder, then add to the
butter mixture until all is combined. Place half the batter in the bottom
of a well greased pan, making sure to spread evenly then top with half of the
topping mixture. Repeat with other half of batter and Topping
mixture. Bake in a preheated oven for 40-45 minutes or until a toothpick
comes clean. * If you double the mixture to make a 9x13 pan add an extra
5 minutes to the baking time. Ready to serve after cooling about 10-15
minutes.
I served this on Friday Night
when we had our neighbor over for dinner and a game of Dominos. Everyone
seemed to enjoy it alot! So today I made another one for our Sunday night
family dinner.
